The design of Füm, a collaborative effort by Arcturis | Square Feet Studio, Grassfed Culture Hospitality, and HAND Studio, draws its core inspiration from the dynamic atmosphere of a bustling Italian piazza. Rachel Uhelski, an interior designer and project manager at Square Feet Studio, explains, "An expansive open area serves as the central hub, around which all the activity unfolds. These diverse elements collectively foster a wonderful sense of community."

Exploring Füm's Open Market Concept and Culinary Delights

The restaurant's layout mirrors an open market, inviting patrons to explore various culinary stations and marvel at the menu's offerings. Guests can discover a dedicated pasta-making area, a sophisticated wine bar, and a special chamber for dry-aged meats. Adding a contemporary twist not typically found in traditional town squares, Füm also features a DJ booth, ensuring a lively ambiance for its 150-seat dining room. At the heart of the restaurant stands a wood-fired hearth and an open kitchen, where Executive Chef Sebastián Vargas masterfully prepares signature dishes like cavatelli and trout.

Architectural Details and Sensory Design Elements

The interior boasts sculptural plaster, forming gracefully curved soffits and columns that soften the space's lines. Walls are adorned with a hand-finished limewash, adding subtle texture and complementing the rich millwork. Blackened metalwork, crafted by a local artisan, pays homage to traditional craftsmanship, while brass accents introduce a sophisticated interplay of light and dark. This thoughtful design ensures that every detail contributes to a cohesive and engaging environment.

A Rich Color Palette Reflecting Italian Tastes

Füm's color scheme is inspired by farm-to-table aesthetics. Paprika-toned ceiling insets, illuminated by cove lighting, create a warm glow. This vibrant red hue is echoed on the kitchen wall, banquette seating, and bar stools. A coffee bar features elegant pistachio green shelving and tiles, beautifully contrasted with dark walnut wood furnishings, enhancing the overall luxurious feel.
